NAUMES CRUSH & FERMENTATION is Southern Oregon’s newest custom crush winery, operated by the Naumes family with more than 100 years of agricultural heritage and experience. The new winery, with its state-of-the-art facilities for winemaking, was created to serve the fast-growing Southern Oregon wine region. Naumes’ expanding list of custom crush clients includes some of the most sought-after wine brands in the region.
The downtown Medford winery includes a cavernous temperature-controlled fruit warehouse, handy to railroad tracks and major traffic arteries, a crush pad with multiple, manual and optical sorting tables, and a winery with gentle gravity transfer capabilities, stainless steel, temperature-controlled fermentation tanks, gas injection system for gentle mixing, cap management and additions—and more!
In the laboratory, where developing vintages are analyzed for acidity, sugar content, and alcohol percentage, there are more wonders to behold. Besides the degree of accuracy and ease of operation associated with the newest analytical devices, their cloud-based software system even enables clients to log-in and check on their wines from anywhere, at anytime.
The wizardry and quality of Naumes’ wines is in the artful hands of winemaker Chris Graves, graduate of UC Davis School of Enology. Graves enjoys making special wine—one special client at a time. In addition to winemaking, Naumes Crush & Fermentation also offers à la carte climate-controlled cold storage for fruit and a full range of laboratory services.
